Vegan meal prep: vegetable salad with plant-based dressing
To reduce waste and make healthy eating easier, I regularly do meal prep. I start by preparing the vegetables in the fridge as much as possible for immediate use. For example, I cook fresh beetroot in advance, cut and cook green beans, cut cabbage into thin strips and pickle cucumber. This way, on busy days, I can easily and quickly make healthy choices for lunch, snacks and dinner. And because it's ready to go, I throw away fewer forgotten vegetables. In this blog, I share one of my favourite vegan meal preps: a delicious vegetable salad with a plant-based dressing.
What do you need for this vegetable salad?
You can adjust the quantities yourself depending on how much you have and how many people/days you are preparing food for. The recipe below is enough for 2 to 3 people.
- 2 fresh beetroots, cooked, diced
- 400 grams green beans, cooked, cut into small pieces
- 4 strips of chicory, raw, cut into thin strips
- 10 large garlic olives
- 1 handful of sunflower seeds
- 2 tbsp pine nuts
What do you need for the vegan dressing?
- 2 tbsp olive oil
- 2 tbsp vegan mayonnaise
- 1 tbsp mustard
- 1 tbsp natural vinegar
- Juice of ½ lime
- 1 tsp agave syrup
- Fresh basil, finely chopped
- Salt and pepper
You can easily make this vegetable salad by placing all the vegetables and other ingredients in a bowl or container and then stirring in the homemade plant-based dressing!
This fresh vegetable salad is ideal to take to work or when you're out for the day. You can make the salad the day or evening before and store it in a sealed container. But of course, you can also just enjoy this recipe at home! By stirring in diced cooked (sweet) potatoes, you have a delicious, nutritious and plant-based potato salad. The salad goes well with all kinds of meat substitutes and also tastes great with fresh baguette, for example during a picnic!
