With this recipe, you can whip up a delicious and healthy meal that is also fun to make. Think crispy sweet potato fries, cheerful radishes, fresh broccoli and cubes of crispy tofu. Everything gets an extra tasty flavour from a fresh lemon dressing and a hint of ginger. Let your children help in the kitchen and create a plate full of colours and flavours together. Bon appétit!
What do you need?
- 1 large sweet potato
- 10 radishes
- a handful of cashew nuts
- half a broccoli
- half a jar of broad beans
- half a block of tofu
- 1/4 lime (juice) and lemon zest
- piece of ginger
- two handfuls of panko breadcrumbs
- 1 tsp Cajun spices
- salt
- 1 tbsp soy sauce
- sunflower oil
- olive oil
- flour
- 1 tsp agave syrup
- fresh parsley

How to make it
- Preheat the oven to 200 degrees
- Cut the sweet potato into chips. Add 3 tbsp sunflower oil, 1 tsp Cajun spices and some salt: mix together and bake in the oven for 30 minutes
- Cut and wash the broccoli and cook for 3 minutes until al dente
- Dry the tofu in a clean cloth, cut into small cubes and fry with 3 tbsp sunflower oil, 2 tbsp flour and some salt until crispy
- Heat the broad beans
- Cut the radishes into small pieces and put them in a bowl with the cashew nuts
- Make a dressing with 2 tablespoons of olive oil, lemon juice, lemon zest, 1 teaspoon of agave syrup and fresh parsley. Add the dressing to the radishes and nuts.
- Grate the ginger and fry it in 1 tablespoon of oil. Add the spinach over high heat and deglaze with 1 tablespoon of soy sauce.
- Serve everything on a large plate and add ketchup and vegan mayonnaise if desired.
